I highly recommend kappy's (edit: refer to site rules please) after moving here from London we struggled to find a really good roaster in the CBD. Very happy to find kappys...

Yes Tony, compared to Sydney and Melbourne, Adelaide is still a little behind on the specialty coffee front - my personal observation, after moving here for family reasons from Sydney 6-7 yrs ago, is that they're so ingrained into the 'italian coffee" thing, with Italian being such a cultural influence in food/restaurants in Adelaide. And the problem with that (IMHO)?:
1) the "we already know best" italian attitude (ie that's not how my grandmother used to do it 70 years ago in Naples... &
2) the dark, heavily roasted thing

on the second point, there is a fairly big roaster in a place called Rio Coffee in Stepney, however they're very much invested in 2) ie the dark, heavily roasted thing, to the point that I find their beans almost undrinkable - very dark, oily (and often not fresh). Their previous roaster, a guy called Tony D'angelo who has gone out on his own (somewhere near Mile End) is a great guy, although I guess he learnt his trade at Rio, so whether that means he still focusses on the dark roast-thing, I'm not sure.

Interesting!  I've actually started roasting darker since starting a journey it's a commercial lever machine.  I'm enjoying coffee that tastes like coffee and thus find the light roasts now less attractive.  Mine aren't overly dark mind... only to the first snaps of second crack but it's certainly darker than many commercial roasts I've bought recently.

same i dont hit second crack any more but i do try and max out on the developmental / coasting stages of the roast to get more flavour and a bit of colour (not dark) on the bean

I cant stand green roasts and coffee that tastes like apples or some sort of flakey pastry - if i wanted to eat an apple Id eat an apple !

But Im also allergic to rancid foods so if a roast has been pushed too far or if the beans are too old it makes me feel sick - which is not what you want when you're drinking a coffee!

its a fine line between pleasure and pain!
