My name is Jack and I&#39;m an audiophile from Melbourne. It seems many audiophiles eventually turn into coffeephiles for our love of tweaking and staying up late at night, and I&#39;m one of them.<br />
<br />
My wife and I have actually been wanting to own an espresso machine for at least a year, but our priority was always paying off the house and then upgrading my audio (well more my priority than hers). We&#39;ve done both and finally bought my first coffee machine two months ago from KBean.<br />
<br />
I had researched extensively what I had wanted for my first coffee machine - Lelit Elizabeth, but I ended up with the Lelit Mara that Paul had suggested. I didn&#39;t even know the Mara had existed and researching the E61 made me realise how much I would&#39;ve regretted if I had gone down my initial path of the semi automatic. The fully manual Mara is a tweaker&#39;s wet dream <img src="https://coffeeforum.org.au/plugins/emojiextender/emoji/rice/smile.png" title=":)" alt=":)" srcset="/plugins/emojiextender/emoji/rice/smile@2x.png 2x" /><br />

In my spare time I enjoy listening to music, playing badminton and woodworking. I&#39;m here because I&#39;m looking to be part of an apolitical coffee community, to learn new things on coffee and share experiences.<br />

Ive an ordering system that doesnt require collecting money, preorders each customers preferred drink and can give an ETA of 5min. Im in the process of conducting a survey to assess if the locals would make this a viable business opportunity. Glad to be here. This looks to be a pretty fun community.<br />
<br />
So a little bit about myself. Never worked as a barista but have alwasys loved coffee. Gre up in a coffee drinking culture where every meetup with family and mates would result in a trip to the closet cafe or coffee shop. As the years went by, my appreciation for the depth of coffee expanded and I have tried my hands at coffee roasting at home a few times (nothing fancy, just a stove top and a popcorn maker).<br />
<br />
So an amazing oppurtunity presented itself a few days ago. A local coffee roaster invied me in for a chat and an interview. He reckons that they may have a spot opening up for roaster in a few months time and he&#39;ll be in touch again then. This would honestly be a dream come true but... there is always a but. I am building a new home (should be ready in 4 months they reckon), and a baby on the way. So I&#39;ll have mouths to feed and a mortgage to pay.<br />
<br />
My dilema is not what the paycheck will be looking like this year, rather, what are carreer growth oppurtunities in this field, and how do I avoid getting stuck at the same position and pay rate in say 5 years time.&nbsp; I am in marketing at the moment and there is a career path before me. But being a roaster would be a dream come true. Unfortunately at this stage in life, I need to be fairly certain that if I take the plunge, there is a viable career path ahead of me. Is being a coffee roaster a viable career choice or would I need to look into owning my own roasting house in the future?<br />
<br />
I&#39;m hoping there are some professional roasters on the forum who may be able to provide some advice. So yeah. Great to be here, and I would love any advice I could get.<br />

I&#39;m the proud owner of a just purchased second hand Sunbeam EM6910 coffee machine and EM0480 grinder (I&#39;m told these were sold together as a package brand new). I bought it last night for a steal and have spent a few hours cleaning both pieces of machinery. I have also just purchased a bag of beans (Niccolo house blend, my friend is a barrista and can get me these beans at cost so I thought why not).<br />
I have gone on youtube and looked up how to work the EM6910 and I&#39;ve got a fair idea where to start.<br />
<br />
Having said all that, I&#39;m a bit confused on how to setup the grinder. I know the EM0480 is basic and the pro&#39;s wouldn&#39;t use it but it&#39;s all I&#39;ve got for now, should I set it to fine or semi fine for espresso?<br />
<br />
Can anyone else give me some pointers on how to tamper and how I should setup the timing of the shot? I have reset the machine back to factory default (previous owner had changed water pressure and timing settings) is it as simple as trial and error?<br />

My first post to the forum, so a quick intro... I spent a few years home roasting and for the last 9 months have started selling coffee at farmers markets on the weekends and a bit online. I also drink coffee. That just about covers everything.<br />
<br />
Although for the gear freaks... I roast on a 1kg electric drum roaster, although use my Behmor for sample roasting. Lately I&#39;ve been brewing mainly using my Flair manual espresso maker which I love, but also use the Aeropress quite a lot. I use both of these at the farmers markets to give people samples. I have a great Quamar grinder that I bought from Paul, aka <a href="https://coffeeforum.org.au/profile/K_Bean_Coffee" rel="nofollow">@K_Bean_Coffee</a>, but find myself using my Porlex hand grinder just as often as it&#39;s very convenient for the &quot;two long blacks&quot; cupping method. Very occasionally I&#39;ll make a pourover with my Alto Air Dripper but I find it makes a pretty weak cup. I have a couple of great insulated plungers which get used sometimes and a Via Venezia which doesn&#39;t get a lot of use now that I have the Flair.<br />
<br />
Right now my focus is on cupping as many coffees as possible using the simple &quot;two long blacks&quot; method. I&#39;d love to team up with like minded people to get my hands on as many 50 gram samples as possible, either by swapping or splitting up 250g bags.<br />

&nbsp; &nbsp; My friends call me Tony and like everybody else here I enjoy a good cup of coffee. I brew with an ancient Cimbali Domus made in 2002 and in my limited experience with domestic machines, makes a brew that is difficult to better and the massive cast construction indicates that it will outlive me.<br />
&nbsp; &nbsp; I roast in a machine that Heath Robinson and myself designed, incorporating a champagne bucket for the beans, an Ozito hot air gun for the heat and a motor off a 1960&#39;s photocopier for the stirring. It does a kilo at a time which is more that I can drink and keep things fresh.<br />
&nbsp; &nbsp; As an aside, I also have a 50L brewery for that other beverage, but that&#39;s another forum.<br />
&nbsp; &nbsp; I joined this forum for selfish reasons as the Cimbali disappeared in a cloud of smoke and a loud pop. It turned out that a large capacitor connected to the pump failed gloriously. I removed the remains and the machine still runs the same. I wish to discover the function of this capacitor and its importance. Perhaps somebody can advise me which part of the forum I should go for advice.<br />

Just ordered myself a Profitec 700!&nbsp; I&#39;ve upgraded from a nasty little Nespresso\Delonghi pod thingy with a froffy tube on the side that wouldn&#39;t blow the dust off a cushion......&nbsp; Sooo I&#39;m a tad excited for it&#39;s arrival... Tomorrow hopefully.&nbsp; To keep it company I&#39;ve also ordered the Profitec Pro T64 Grinder so should be a nice match.<br />

Looking forward to soaking up some experience from seasoned brewers.&nbsp; I think I&#39;ve watched more youtube videos on how to get it right but I&#39;m sure there&#39;s no substitute for getting your hands dirty and learning from mistakes.<br />

I suppose it is only right to introduce myself.<br />
<br />
My name is Grant and I have been a member of CoffeeSnobs for 12 years which has been really good. I Paul from K Bean is now on this forum (I bought a nice Macap from him last year) so I thought well why not come across and belong to two forums.<br />
<br />
I&#39;ve been roasting coffee for a long time and I have a Hottop which is 12 years old now and hasn&#39;t missed a beat in all that time. Fantastic.<br />
<br />
I do like equipment. My last espresso machine was a Bezzera BZ-40P and I had that for 12 years as well. Fantastic but the time had come to replace it so I got a nice new Wega Mini Nova Classic. Lovely machine E61 group and all is good. I like plumbed in machines as it save so much trouble in the long term.<br />
<br />
My grinder is a Macap M4D which I have had a year and is a great unit, perfect size, solid and looks great.<br />
<br />
I temporarily, my wife advised me, have a Mazzer Robur grinder in the kitchen. I just bought it out of curiosity. I only just got it on the weekend and so far really like it. It is a doser model and I&#39;ve decided a good doser is actually quite a good thing. Powerful, quiet (sort of) and gives an amazing fluffy grind. I&#39;m not sure yet whether the flavour is much different from the Macap though.<br />

I like having meet ups with like minded people and over the years have hosted CoffeeSnob members here in Woodvale at my home.<br />

I will start off by saying I am not a coffee aficionado. That isn&#39;t to say I don&#39;t like coffee as I love it. I will brew a cup as soon as I wake up and my last cup will usually be poured around 10/11 at night. I am just not into the whole brewing side of things but I would like to be. When I was growing up we only had a drip coffee machine from Black and Decker, it wasn&#39;t until my mom brought me to Starbucks one time that I knew there was more to coffee. I now own a french press, a Vietnamese drip, and a pour over that I use interchangeably. I&#39;m new to the forum, and was referred by Paul from KBean who I visited a few weeks ago.<br />
I saw the CIME co-01 in action at his showroom and was very impressed. Not in a hurry to buy - sometime in the next month or so, earlier if the right deal comes along.<br />
<br />
I am in the market for a quality espresso machine + grinder that can produce 2-3 coffees on weekdays (mix of black and milky), and 4-5/day on weekends. For entertaining we may do around 10 at a time, around once a month or so. For these requirements, I think I&#39;m looking at a HX machine and suitable grinder to match. Happy to hear other suggestions. I&#39;m upgrading from a pod machine - so no comparison - I just want something that will last 20yrs (ideally) and not require upgrading (I hope!)<br />

I have recently also thought that it would also be useful to be able to transport the machine between different locations. We often go away for the weekend (around once a month) to the peninsula, and also co-host small gatherings at family&#39;s places nearby (again once a month-ish) - in both instances would be great to be able to take the machine with us. If this is completely impractical please tell me (and also why), otherwise I will make weight, size, and general transportability one of the buying criteria.<br />

Based on this, the CIME co-01, impressive as it is, comes in on the heavier side at around 34kg. No other major drawbacks that I could tell - just lacks some of the fit and finish of top-end brands. There&#39;s an upcoming CIME co-11 which is smaller and cheaper (20kg according to CIME&#39;s website). Main drawback of co-11 is the lack of a hot water tap: Not so much for the hot water itself (though useful occasionally), but because the boiler can&#39;t be drained, at least not without opening up the unit. I don&#39;t know if this is an issue in practice - e.g. if we&#39;re away for a month and then want to use steam, will the &#39;old&#39; water be an issue?<br />
<br />
Of course, I&#39;m open to suggestions on other brands and machines, and I have not had time to visit anywhere else just yet.<br />

Nice to see quite a few familiar names here.<br />
I&#39;ve been a coffee enthusiast for around 15 years.<br />
People often ask me things about &quot;good coffee&quot;. In my opinion, that&#39;s a personal preference.<br />
My particular style is authentic Italian espresso which for me means less latte art, fruit, flowers, sourness and more bittersweet dark chocolate, caramel, nuts and body.<br />
My current set up is a plumbed in Rocket Evo, Mazzer mini electronic type A and a fully restored La Pavoni Europiccola 1976.<br />
I&#39;ve been roasting as a hobby for around 5 years also supplying friends and family on a fully customised computer controlled corretto roaster.<br />
I have a detailed build thread for the roaster on another forum but am in the process of putting it into a blog which I&#39;ll share here once it&#39;s done. I&#39;m also in the process of upgrading to a small 1-2 kg commercial roaster, more on that in another thread once I get around to it.<br />

So I&#39;m new to the forum but have been on the espresso coffee train for about 6ish years. After beginning my journey with several cheap machines that kept failing I&#39;m happy to say I&#39;ve now upgraded to a Lelit PL41TEM a few weeks ago and a brand new Quamar Q50P grinder which arrived today!
