I wasn't sure whether the second quote was meant to say 'unwashed'. Mine certainly are a strange and scraggly looking bean - different shapes, sizes and with the mucosa still partly in place. I'm not sure what kind of washing-status (if any) this indicates. I suspect I took this bean too far - next time I'll stop it a little earlier.
Apologies, washed only. We do many tons of washed Yirg every year. Unwashed is too hard to source at certain times of the year, so it becomes pointless trying to place it in a blend. I have only a couple of bags of unwashed Yirg which are used for the occasional special private label order. It's very nice, quite wild and intense in the cup, used only in small proportions in a blend. Yirg can benefit from lighter roasting levels, but like most beans you need to be careful about sourness and with most Yirg's the sour thing can be substantially pronounced and thus need extra, extra care....... My only gripe with washed Yirg is the flamin des-toner chokes on it's throat due to the small peaberry shapes that Yirgs have.......makes for a PITA destoning tasks - having to slowly feed the beans manually.
