When I was in the Brisbane CBD this week for the first time in years, I discovered those markets opposite the top of the Queen St Mall. Noble Coffee who pretty much seemed to be doing a single product - single origin PNG roasts in medium-dark and dark. They had a sample out which the girl said was medium-dark so I got a couple of hundred grams on a whim. Opened it up when I got home to discover it was the lightest roast I've ever seen. Even, nice looking, but so very light that I was worried about grassy, fruity acidity and was a little worried I'd wasted my cash. Short story - beautiful. Rich, earthy tasting and very very smooth with only a hint of the brightness that seems so common to the high-end coffee places that I've visited in Sydney and which I don't really like in abundance. They were also selling PNG greens at $15 a kilo, so good to keep in mind for an emergency top-up. Wish I'd gotten some now.
