You could do what I did when I started out, though it's not strictly kosher - I went door knocking and volunteered to work unpaid in exchange for experience - like work experience if you will. Although, I should note, this behaviour is now deemed unethical, and illegal (to effectively employ someone without actually paying them) - but as a result, and based upon a bit of self-determination, I have since worked at some of the countries finest restaurants (many of which have since unfortunately faded from the limelight, a bit like me, really!) - with Mietta's, Marchetti's Latin, and the Lakehouse being among them!
