Hi Brett, if you can find it and you get the chance, try some Sumatran coffee from the Lake Tawar region. But the thing is that every cupping session gets you going on some coffee or other, but its a crop and results change from season to season and depend on how you roasted them and then brewed them, and there are lots of great coffees to try.....lots!
