Good morning all. From a professional roasters point of view... a) Anthology...too much thinking....forget the details....try the coffee...that's about it. Dont expect the coffee to be the same every time, because fresh coffee changes markedly early on after roasting, and because the prevailing weather conditions, the number of days from roasting, the particular batch of raw coffee beans, and any other factor can and will change from time to time. Smaller roasters roast "by hand", and this also results in changes from batch to batch, and is most probably one of the reasons why many clients prefer to buy from these small local business people rather than buying a stale packeted supermarket product. If this is the case they need to have a different level of understanding, particularly with regard to so called "consistency". Stale coffee is very consistent, fresh coffee isn't. b) Too much information on the part of the roaster, published on his website. Some think that if you publish that kind of info (as described by you) for all to read, that it embellishes "the story" or makes them sound like they know what they're taling about...or whatever. Trouble is it just starts punters questioning what has been written ( as you have just done). c) But in any case, think of the economies of scale of running a business...you rotate the stock so as to sell the oldest product first...this means the coffee beans "rest" as a matter of course, whether it was intended as a feature of the product by the roaster, or simply because, you cannot roast coffee on the spot for every individual client through the day every day or you would end up in hospital suffering from work related stress!!! Relax and enjoy the coffee ride. Regardz, FC.
