Easy way to get airflow control on 12v fans. (e.g. Hottop)

Just found out that the instrument  panel dimmer control switch on daughters Saab 900 is a PWM Controller. All nicely packaged into an easy to install assembly.

This would work very nicely as a manual fan speed controller for 12 volt roaster fans such as hottop would it not?

Quite likely other car dimmer switches are the same. Easy to collect from any wrecker

With my motor I just want to turn the speed down BUT I want to maintain the power so that it can turn under load. I have considered this, but $28 though.  http://www.jaycar.com.au/productView.asp?ID=MP3209

On my Hottop for an initial play I did use a PC cooling fan controller too. Not PWM so they will generate a bit of heat but it worked fine for a few roasts. My Hottop is in pieces at present so I will take some pics and try and sort out some sensible circuit diagrams of the manual fan and element mods.
