A while back I was out with my wife when she spotted a cafe and said let's grab a coffee. Knowing the place, I said it's the most pretentious cafe I've ever been to. She replied with 'what, even more than Sensory lab?' I said 'yes, even more'. She didn't believe me, until she asked for a decaf skinny latte, only to be told they don't do decaf, or skinny! And the cafe? Well I'm not into naming and shaming cafes in public, but it's a well known small chain(2-3 locations) in Melbourne, it was near Queen Vic market, and it wasn't Padre.

I took my kids to prahan market and had a coffee only to be told that they don't do hot chocolate (for the kids) as they are "coffee roasters"........ I don't reckon they cooked the croissants in their roaster though. I won't be back

The Pete Evans diet was worth a mention also! I like his recipes and many of them are health conscious but the article in the paper ith his diet certainly rolled many eyes in my staff-room at work... Which is pretty good going because all bar two knew what activate almonds are!!

I'm surprised at the reference to siphon coffee though as its great fun to make and to me at least, very enjoyable to drink - perhaps not @ 8

isn't the guy in the pic of this original post the Melbourne $millionnaire who bought St Ali and then Sensory Lab [& has suddenly become a coffee 'expert/guru']? dR :🙂

Salvatore Malatesa (sp?). He bought St Ali quite a few years ago, at least 6, maybe more. And he opened Sensory Lab, rather than buying it. I don't think him being a millionaire from his pre-cafe days (if indeed he is) means he can't be a coffee expert. I have no affiliation with St Ali, truth be told I think their coffee is very slightly overrated, yeah it's good but not by far the best in Melbourne as some claim. However I've had a few minor dealings with him and each time I've come away impressed with his attitude to customer service, he clearly cares a lot about making the St Ali customer happy. Now if he'd just leave the beans in the roaster another 30 seconds...

I've never been a fan of St Ali espresso roasted coffee -too green for my liking - but I went to St Ali North last week and had 3 coffees in a row - and was very impressed by the balance between sweetness and acidity Could it be that having Mathew Perger on board has influenced their roast profiles? Whatever it is I for one welcome the change, if indeed there is one!
