We are making sweets
Greek heathy snack sweets

They are called Pasteli or Sesame bars

Ingredients
4 Cups of Sesame seeds
1 Cup of Pumpkin seeds
3 Cups of Mixed Raw Unsalted nuts Kernels or 2 Cups mixed nuts kernels and 1 cup of Almonds
1 Cup of Honey
1 Cup of sugar
Glad bake paper

Method
Bake / Roast the nuts on the oven until just brown ( don't over roast )
Dry fry / toast the sesame seeds in a dry frying pan until some seeds turn brown ( don't burn them )
Mix honey and sugar and bring boil and turning toffee colour ( approx 10 min )

Mixing ( Ingredients are hot so take care )
Mix well all prepared ingredients with a wooden spoon
Have a flat baking pan ready with Glad Bake paper on bottom
Pour and lay out the mixture as flat as possible with a wooden spoon in a flat baking pan - these pans have 1 cm sides
Then use a rolling pin to flatten and compress up to the raised sides of the flat baking pan
Allow 20 min to cool
After cooling turn upside down the Pastely on a clean cutting surface
Peel off the Glad Bake paper allow a few more minutes to dry off
Cut to any shape you desire

Enjoy at home, work, and play

A good winter warmer from Greece
Only a handful of ingredients but beautiful to eat

Fasolatha or Greek Bean Soup


Ingredients:
500 grams of navy beans (or any other small dried white bean)
1 onion, peeled and chopped
3 stalks celery, chopped (leaves included)
3 carrots sliced or diced thickly
More vegetables can be used if its your preference
1 tin of chopped tomatoes  ( or ripe fresh tomatoes )
1/3 cup tomato paste
1/2 to 3/4 cup olive oil ( to add and slowly stirred only when cooking is almost finished )
salt & pepper to taste
Lemon

Directions:
1- Soak the beans in water over night.
2- Strain the water and place the beans in a pot with new water.
3- Bring to a boil, remove from heat; strain water.
4- Replace the beans, add the rest of the ingredients and enough water to cover all the ingredients and simmer covered for an hour.
5 - Consistency is of a medium runny soup
NOTE - A pressure cooker can also be used

Serve:
Serve with crusty bread to dip
Squeeze lemon to taste after its ladled into bowl

Today we cooked a baked lamb & veg meal with a twist

We also did what's called an eggplant caterpillar, its shallow fried eggplant with avocado

Well October 1 was our 24 year ball and chain Celebration and I thought I'd do a little review of an extremely pleasant meal we enjoyed.

Venue: Bay Cafe and Bar

It did by the way, but then I made 'the rod'....

This recipe is a work in progress. Sourdough Easter Buns:

350g flour
160g sourdough starter ( http://allrecipes.com.au/recipe/7766/sourdough-bread-and-starter.aspx )
50g caster sugar
1/2t nutmeg
1/2t allspice
1/2t cinnamon
1/2t ginger
salt
30mL butter
130g milk
1/3 cup diced dates
1/3 cup raisins
1/3 cup mixed peel

Crosses
1/2 cup plain flour
4-5T water

Glaze
60mL water
40g caster sugar
Bezzera Mitica, Mazzer Super Jolly, Behmor 1600, Pullman Deluxe Tamper

Wow, this thread has died a little.

I'm going to revive it.

Last night my wife saw "date logs" at the supermarket, and I told her they were too expensive, and I'd make them myself:

Ingredients:
1 cup almonds
1 cup pecans
1/2 cup dessicated coconut
2 cups dates
1t vanilla essence
90g pistachios, crushed

Blend almonds, pecans, coconut in food processor until fine crumbs. Add cup of dates and vanilla essence. Roll into logs, then roll in crushed pistachios, and press in. Refrigerate indefinitely.

Delicious.
