My stash is getting LOW...  In particular my fav beans are almost all gone...

I've been roasting a couple of years, 725 grams of green a week for 52 weeks  comes to around 38Kg, and that's about the stock I like to keep in reserve, 12 months supply. ;)

40kg aint too bad. SWMBO hasn't noticed that the bags are 2 rows deep (yet) so I reckon I Could squeeze another row in taking me up to 30kgs. Thing starting to worry me is the 3x3x3 rule I often see around.... need to get more family and friends into this!

I'm assuming that that Yirgacheffe Special Prep is from CS??  Want to sell some of that??  Amazing bean that I loved and I am now sadly out of it.  I can't believe you still have 2.25kg of it!!

Why not buy the Trabocca-sourced Sidamo Gr2 Operation Cherry Red or Haile Selassie from Bean Green? Both better beans in terms of quality.

Turnover and not holding endless amounts of greens can be a good thing given that while they may last a while, greens are still susceptible to aging and storage issues.  Most of the guys with big stashes will be those suppling friend and family.  Plus, next order buy 10kg of JBM and you'll have bragging rights over most!

To use a random quote, I feel like my rather paltry 20kg is "heaps", but wifey and I get through 1.5kg/week, which other people have called "a cubic buttload". We also keep a wholesale account with a big roastery in Castle Hill for our church playgroup :)

I think holding greens from last year's crop on purpose is not a great idea unless you're doing it for a very specific reason. 6 months and you certainly lose a couple of points in Cup Quality (CQ).

I'm not sure I agree completely with the 6 month guideline and losing CQ points. It comes down to individual bean character, how it is stored, etc.

Whilst many can't access moisture meters to track and manage green bean condition, I will state that some greens can actually improve over a 6 month period. Why this is the case I'm not sure and it's quite difficult to trace backward to investigate whether is was due to early, mid or late harvest, processing schedule (accelerated or delayed) or in fact any other factors we don't entirely know of that may cause this situation - such as storage in ports and transport conditions.

What I do know is that some beans, particularly when they are very fresh (wet-hulled Sumatrans in particular and even some Brazils we recently received literally within 2 months from processing) are particularly unstable in the first 3-4 months upon arriving (this being up to 5 odd months from crop).

It's the reason some quality estates can actually store their processed beans in wooden vats for 3-4 months prior to shipment to ensure stability. Ipanema and Monte Alegre are examples of leading farms using this practice.

I found a couple of bags from 12 months ago stashed under other bags. After roasting these for a customer, my control samples were some of the best coffee I've tasted in a while and far superior to what we were pulling from the current crop (same origin, varietal, farm/co-op) in a back-to-back test.

What this tells me is age can be less of a factor compared to original bean quality and roast performance.

shhh I'm trying to ignore the fact that you  ^-^ are so generous with both your time and your products ;)

Thanks for the  :thumb: on my choices, I'm trying to extend my range and hopefully try out some blending that 'might' work :)

I've also decided that I'm roasting for some friends as surprise gifts, they'll turn up in their letterboxes as I drive past :)

I'm down to the last kilo or two of the Yemen beans I bought a while back.

Have finally found somewhere I can buy Ethiopian, so will pick up tomorrow 4kgs each of Limu, Sidamo, Yirg & Harrar.

Also off to Addis for a short trip soon and hope to bring back more to re-build the stash.   A couple of 30kg suitcases full of beans is going to look a bit odd coming back through customs.....  ::)

It's only 60-70 roasts so only 20 hours ;)

Starting to look at larger volumes of beans and even whole bags (60kg each) makes my stash seem tiny. So going to need more storage capacity first I think equivalent to 4-6 bags worth. :doh:

35 Varietals, 98kg, approximate overall value of a little over $1500 plus freight (blame the high average on the Geisha ;) ) thanks to my quick and dirty spreadsheet.

Everyone describes it differently. Some say it just tastes like an unwiped bottom, others would call it buttery, yes. Very high oil, and a bit funky (I like it. (The bean that is, not unwiped bottom).

Not picking on you C-Man, but again I see an example of the term "cut through milk".

If there is ever a term that is over-used and in many cases mis-used, it has to be that old chessnut saying "cut through milk". Generally, people see it mentioned and they think it's the way to describe what they want in a coffee.

But really folks - what does it actually mean ?

Is it a flavor that does not get lost when milk is added ?

Is it a body that shows through with milk ?

Is it a sparkling, bright, well-balanced acid level that mixes nicely to produce a refreshing, enjoyable milk-based espresso ?

Applying the term "cut through milk" is misleading without more descriptors.

Is it strong, chocolate, caramel, malt, nutty, fruity, winey, citric......most people just want a rich, smooth, creamy, sweet coffee with a lingering finish. Now how does that match "cut through milk" ?.

People use it to sound knowledgeable and experienced (please, I'm not meaning to offend or insult anyone) and one person's thought of a cut through milk surely cannot and will not match another person's own individual preferences.

As a roaster - it means absolutely nothing to me and when I get people calling up asking for a great coffee that cuts through milk......I need to count to 10 before responding.

When it comes to single origins, saying bean X will cut through milk better than bean Y is really quite misleading.

It depends upon the bean varietal, processing (read quality), roast profile and last but by no means least, the ability of the person brewing and extracting. I can take just about any arabica and make it cut through milk - damn it, now I'm unable to stop saying it. :head:

that last post has me thinking. I am more interested in the obverse (or is it converse?). I look for beans that provide a well balanced cup just as coffee. i.e. don't taste shite as a short/long black.
When I see the description 'cuts through milk', I avoid those beans.

I can roast and brew all the green beans in my stash myself to meet this requirement, but most cafes seem to find it hard to deliver a pleasant cup of  coffee unless it is as a coffee flavoured milk beverage. Many commercial roasts, while consistent,  are just consistently shite as straight coffee.:stir Catering to the market I guess.

I do have to say though that I was surprised at the quality of coffee I had in Sydney recently, most was excellent , including the filter roasted el limoncillo I bought for home consumption.

I think many people use 'cuts through milk'  as an alternative to 'high in acid'

Yeah, I went a bit crazy buying beans a couple of years ago. The oldest beans are just starting to get to the three year old mark. The Sumatra Mandheling has changed flavour slightly, but not to drastically. Hopefully I'll be under 50kg of green by the time the end of the year comes around. When I get the stash back down below 40kgs I'll start thinking about buying some more.

Yeah, might've gotten a little carried away...  I do like to keep my options open  ;).
Actually it can be a little counter productive at times, I can spend more time trying to decide what to roast than actually roasting  :-| .

I can't wait to see some of your blends  :thumb:
I'll be sure to share when I think I have something worthy.  Still mainly working on identifying what works for me and what doesn't, so I expect (hope  :angel:?) that the number of individual coffees will diminish slightly over time.

You guys are crazy. or full of beans!

so name a good stand-out SO that cuts through milk.

I might be a little late in replying to this post, but since I started roasting, I've been in a search for a SO that just would taste good with a latte and by itself in a short black. My partner loves her latte and I'm all for short blacks and I found:
1) Peru Ceja De Selva Estate [10 days rest time - pulled (quite close to but) before Second Crack]
2) Costa Rica Tarazzu [5-6 days rest time - similar roast level to the above]

both are quite nice by itself and with latte's.

If you do every try it, I'd be keen to know if it works for you.

Well I have been working hard at dropping numbers and looking back from Jan's audit I have reduced around 20kg in that time consider I brought 10kg from Coffeehorse (Redonda & Santa Clara). So the stash is weight in at just over 30kg and still room to move over the coming weeks to knock off a bag ends!

Geez Richard, sparse as it looks, you can take heart in that apart from the problematical Tanzanian, it IS a quality stash.

Impressive lists out there! As an inverterate collector I see problems ahead!
So some questions for the veterans (I don't have a book yet see!):
1. What would you consider the five "must have" beans, based on ease of roasting, and quality of cup, and blending possibilities, for a beginner to aquire?
2. Best way to store the beans.
3. How long can you store the beans, relating to quantities?

Hi Janlab,

Always in my cupboard:  Peru Ceja De Selva Estate: it is easy to roast, tastes good at a variety of roast profiles and works well for most styles of coffee, from espresso to plunger.
And storage; anywhere dry, dark, cool and airy. Our stocks are in calico bags in an often opened pantry cupboard.

2.  In a dry dark place in a sealed container (contentious issue)

3.  Give or take three years.

4.  It's a slippery slope as you can tell by som of he lists.  I tend to keep smaller amounts and use great services like BeanGreen more frequently.  Especially as the storage, variety and shipping is free.

Hello and welcome J.

As you may guess, opinions vary, so here's my suggestion.

Different people appreciate different flavours in their coffee, so you  should get a variety of beans and play around to choose what suits you. Also, over time our tastes change, or we may just be in the mood for a different style of coffee.
Always good to keep a Brazilian in the stash, I usually have a PNG, a Sumatran and at  least one Indian (elk hill or tiger mountain are good. I tend to favour central american beans, but have thoroughly enjoyed a Kenyan peaberry and a Rwandan of  late.
Bean green are worth a look. Grab a kilo  of several varieties so you can try a wide selection and then order more of beans you really like. Plenty other places do sell by the kilo,  but the wide selection and free shipping work for me. Also, some roasters will sell a milli or two greens if you ask nicely.

Storage? Common sense I reckon, no wide variation of temperature. If humidity is an issue, use sealed containers.

I think three years is the maximum. One year is fine, two OK. They do change slightly as they age, but not to the extent of roasted beans

I'm slightly worried. My old kitchen shop grinder died in the move. And there were already a number of "from Jan, with best wishes, to Jan" presents this year. So where does one start? Any suggestions?

I had some of the Haiti about 3 years ago and haven't noticed any available since at BG nor MoG.
At $21.50/kg is not a cheap option but I thoroughly enjoyed it in both milk and black.
I can't recall the exact palate feel as it was so long ago, but I do remember not wanting to "share" too often with friends.  ;D
Got mine from CS and it was described (edited) as:

I still have about 1kg of this from CS.
I haven't roasted it for a while but I can vaguely recall something like Jamaica Blue Mt (ie balanced)
 if you google Haiti Grand Cru you will see some links to CS posts including one from Borat, describing it in glowing terms.
