ok I admit to being an espresso and a milk 'purist'

my espresso usually has to be single origin 7 to 10 days post roast - and as a rule I wont drink coffee with milk unless the milk is unhomoginised (which usually also entails organic and or biodynamic)

but I picked up a bottle of Macro organic full cream milk from the stupid-market yesterday mainly because price point was cheaper than other milks available - and I have been happily drinking cafe lattes made with this milk ever since

I must say I'm impressed with the super creamy nature of the milk and it textures beautifully, making for a lovely cup of coffee!

What are others drinking?

Generally the local Sungold produced product. Consistent no added permeates, only minor issues it gets are after very hot weather or calving times. Tried some Schulz's unhomogenised a few weeks back, steamed great and tasted as good or better than the Sungold but local availability is 30km's away until I get up and selling coffees full time and will most likely consider a change to it. More expensive by 30% but that only works out to $0.10-12c/cup increase. Shhhh but I also tried some actual straight out of the vat Milk 2 weeks ago fat content up round 7% ;D A little different to steam but the result in the cup was luxurious 8)

I'm using local Cooloola pasteurised only jersey milk. A tad expensive at $4.30 for 2 litres but the kids need fattening up and I refuse to help Coles & Woolies shaft what's left of the dairy farmers in this country. The milk is fantastic to steam, and creamy and the taste... yum.

I've also taken to drinking long blacks lately so that keep my consumption down a smidge.

Procal is still my favourite milk, but so difficult to obtain for a normal non-cafe purchaser. A2 is my 'go-to' milk - like procal but a bit creamier & doesnt always microfoam as stunningly ($4.99-5.15/2L). Riverina is better than Coles/Woolies/DF. - $2.99-3.79/L Macro Organics is nice but very rich/thick/creamy - the price point of $2.24/L is okay too Otherwise, Daisy Fresh is the cheapest milk in NSW that produces OK results - an ex Australian Barista Champion told me it is used at their place of work when they run out of Procal. I'm still after good NSW milk options though. Over The Moon is just too pricey at $6.99/7.99 per 2L

I would love to be able to get Procal but they don't get out of Melbourne with their distribution in Victoria. Plus shipping milk all over the place is nuts. Plenty of Melbourne cafes using it. Schulz's is about 70km away but it's easier to get it in Melbourne than locally ::) Market Lane uses it plus a few others in town.

My normal "goto" is the A2 @liter from Coles but since I have moved house the Mrs has been shopping at Woolies and just this week she came home with 2x 1L Paul's Farm House Gold - me likes very much!

We've been using fat-free lactose-free milk for my wife's piccolo lattes. I'm blaming it on my difficulty coming to grips with texturing milk.

what milk do you guys recommend that can be bought at the supermarket and is also low fat or fat free? Grew up with low fat milk, and find full cream too heavy :-(

When using "normal milk" (I use lactose free normally), I either get Pauls Smarter white Milk or A2 Low Fat. They're both really really good. The Pauls is cheaper and more readily available.

Jonesy's - 100% Organic and full of fat and big thick chunky bits. Nothing else comes close, including Procal, which we had used, along with many cafes we supplied. Procal is permeate-free btw.

I haven't seen it in the Safeways I have been in. Maybe not available everywhere? Been using Demeter Bio-Dynamic for events/markets where there are a lot hippies. High in fat. Stretches quick. But highly variable depending on season. Sungold Jersey when the mix of people is more normal. Very consistent. Textures beautifully. Bubbles that you normally have to tap out break down on their own!

I like Jonesy's & Procal but for me (as I don't have a business), it means I have to plan well ahead because to get it involves me going to certain cafes who will onsell. A2 is the one for me & and the family. Not only is the quality & consistency very good, it's conveniently available in supermarkets. Seeya

We use Norco in the "office", which textures fine. I used Barambah full fat at the QLD comp and I find that amazing to texture on the comp machines, but during recent practice it has been almost too creamy in taste. I'm planning on doing some practice with some lower fat milks to see how they go.

Must admit I've never frozen milk. How long would you typically freeze the milk for and does it lose any characteristics especially from a microfoaming perspective?

Don't worry about freezing milk. She's good. :thumb: Remove a litre from the freezer as you open the one you're using. It will be nicely thawed and suitably cold by the time the other one is spent....coupla days. We always use Maleny Milk Farmers Choice Guernsey full cream milk. Nothing else tastes quite the same.

I use Pauls Zymil and Vitasoy Soy Milky low fat both UHT in my house. Don't have too many other choices, but for value, storage, and texturing, they seem to be the pick of the ones me and the wife can drink. I use A2 full cream when I have guests coming over.

Its all good. Doesnt seem to change anything with the milk. Got 1 defrosting now in the sink. Just took it out of the freezer and by morning it will still be a bit icey. More difficult in winter to get the defrost timing right. Bloody stuff can take all day to defrost in the sink depending on the temp. They dont stay in the freezer for long as I go through nearly 2 lt per day so its more for storage rather than emergency milk.

Here in WA, I use Bannister Downs. The containers are made of a material that's degradable. The milk is of good quality and they don't suffer from problems during certain parts of the year when the milk doesnt froth properly due to cold storage problems, weather and/or feed change. $2.20 per litre which i think is a good price for the quality. At times i do use Margaret River Organic, which is the old fashioned kind of milk where the cream sits on top, and some agitation is required before using. Creamy. Both those milks are close to %4 fat content. gary at Gala

I have just spent two days at Cafe Biz in Sydney, while there I sampled a new Cafe Milk product from Devondale, it can be stored non refrigerated and comes in a carton like the UHT milk cartons. Sampled a couple of coffees using this product and they tasted great
