Roasting Hawaiian Kona

edited January 1970 in Roasting - How To do it
Afternoon all,

Picked up a kilo of Kona Kaipo and was wondering if anyone had any profile ideas.

I seem to recall Joe of Behmor fame putting profile 4 in his machine and suggesting that for Kona, i.e. slow temp rise application.

Can anyone confirm this? At $40 plus per kilo and one kilo on hand I'd hate to make mistakes...  :'(

Cheers

  • Never roasted a Kona or tasted one I will be checking this thread as a just in case the info is needed by me in the future KK
  • I just did my first roast with the Kona Kaipo yesterday and it worked out pretty good. Did 250gms profile 1/2 P5 D and hit the + 4 times near the end to achieve about a CS9. CS9 was recommended by a fellow roaster. If it helps ease the "pressure" of roasting pricey beans; 200gms is about the cost of two takeaways!  ::) I finished with 148gms, so a 52gm loss. Seems a bit high, but maybe the island beans being softer have more moisture in them. Any views on that anyone?

Thanks kevohere - yeah I think the moisture is the reason for the light heat application early on that Joe was trending towards. Now I gotta convert that to heat gun/bread machine language.... Or pull the Behmor out I guess
  • Well I roasted 333gms of this yesterday arv... Started slowly with gradual temp increase. FC at around 13 mins and SC at 18. Bagged and sealed. Got about 250gm of Peru Ceja to get through first so should get 5 days at least resting before the big moment. Back in 4 days or so...
  • Long 4 days....  Took the first lost say 30 secs into second crack..... burnt!!!  :'(  :'(  :'( Anyhoo.... Just on second crack, 7 days rest, hmmm.... distinct strong flavour. No real fruit nuances, no caramel/choc tendencies, but coffee. Strange if you ask me but my palate may be shot, who knows. Very nice. Coffee....
  • I roasted the BeanGreen version Kona Captain Cook extra fancy.  I used the KKTO and ramped up slolwer than usual to fc.  Pulled it just on rolling SC.  24 hours post this is absolutely awesome.  So smooth and yes mate, coffee!  :thumb:  Brendan's offering is not cheap at $40/kg but it's apretty special offering and I'm packaging some for a mate as a thank you. 3D8E43F3-2FB5-4B60-BCF2-24214448D284-5763-000004A7127AAD45.jpg
  • Hmmm, just read my post..... :-[ What I meant to say was... First lot burnt flavour, Second lot, details above.  ::) Thanks Brett for your feedback. Third lot (last of the kilo) I'll crack the bag sooner. Cheers mate, Rider Weekend away and watching the golf and too much wine n stuff....
