I have come across a few establishments in SE QLD that roast in house, using the Green Bean Roaster.
Merlo at Ferry Road Markets and Kiva han at Broadbeach are local to me, and well known on the Gold Coast.
The attraction of in-house roasting can be a drawcard. To a business owner the added profits may seem like a cash cow. The machines are simple and roasting is supposedly a breeze. More info here.

The popularity of some of these establishments has more to do with other factors, than the in-house roasting. Food, location, ambiance, trading hours, good service etc are the underlying draw-cards. The roasting gives the place an edge, but I believe the ROI is not there. It may seem profitable, but you have to sell a lot of beans to cover the wages of what is basically one person, to look after the process.
Don't get me wrong, I am not bagging the product, and Kiva Han is very popular with my daughters and their friends. I like the place and enjoy the ambiance.
The issue I have is with the coffee. Even though you can set a profile (according to the website), it seems that most of the establishments just roast for a set time and that is it. The coffee is definitely not third wave, it is roasted for espresso. To me it all tastes very bland. The espresso is made well, but is a bit one dimensional, lacking body and sweetness. No fruit is evident, but the roast flavours are.
In comparison to the average establishment on the GC, the coffee is exceptional, simply because it is fresh, properly made and not bitter. When comparing it to products from "good" roasters, it is average.
I do not know a lot about these roasters, and their capabilities, but so far I am not overly impressed. Maybe the control over the roast profile is available, and all that is needed is a qualified roaster to bring out the best in the bean.
