After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.

Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.

Cafe Supply - Savouries?

I don't know if this is too off topic, but does anyone have any good contacts on who supplies cafes with fresh savouries? We don't have our own kitchen in our cafe and are finding it hard to supply our customers with something savory (we mainly serve sweets).

  • oh thankyou, we have actually been using them! They are fantastic however I should have specified I am looking for someone who does fresh sandwhiches or easy to serve things like that. We are so small that a lunctime rush of quiches or filo's really strains us as we have to microwave and then bake them a little in the oven. We have tried just making our own fresh sandwhiches but it is just seeming to be too much trouble at the moment!
  • I might be able to help. For a small operation, buying in simple items such as cakes and sandwiches from a supplier is not cost effective, and with a low turnover you may have a lot of wastage. Making fresh sandwiches isn't hard. To cater for the lunch rush, you could have them already made an hour beforehand, just clingwrap them and cut to order. I assume that you only have a microwave, domestic size oven, and a passionate staff of two living the enviable dream of having your own cafe, no matter how large or small. It appears that you don't have much experience in cooking, so I'll keep it as popular and straight forward as I can. The most popular sandwiches for a small operation are Ham Cheese Tomato, Chicken Cheese Avocado, Chicken Cheese Mayo, Ham Sweet Pickle Cheese Tomato. Limit your offerings to only these, and experience will tell you how many to make up prior to your lunch rush. Perhaps get a Focaccia grill and also offer the sandwiches toasted. Already baked Croissants are available frozen for $1 each ($50 per carton). Before your rush hour, defrost some, split them open and fill them with Ham Cheese Tomato, or any other ingredient that takes your fancy. At service time, grill the filled half for 3 minutes, then lower the temperature and attach the top and bake for a further minute. Heat a Crossiant in the oven for 4 mintues and serve with butter and jam. You are located in Brisbane, so go to your local Supermarket and look at their bakery department. Apple Cinnamon Shortcake for $3.50. Blueberry Shortcake for $3.50. Only small, about 6 serves per cake, but small means fresh and quickly turned over, 58 cents per slice. Warmed in the microwave for 40 seconds, a splash of custard and some Chantilly Cream, charge $4.50 and that's a good profit. I've got plenty of other suggestions, tell me what equipment that you have, and I'll try to help
