After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.

Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.

Finca El Carmen + Yirg = Win

Lacehim, you should pop around sometime and have a try of this combo.

Roasted just into R2C, and only 5 days post roast this my favourite to date.

It's best as the tightest ristretto you can manage and still get decent volume: 25-30 mls in 25-30 secs on an 18g double is giving me thick, viscous pours with an intense choc/licorice

  • (iPhone + boy = erroneous sending) Intense choc/licorice flavour, a full body and lingering taste that's extremely pleasant. Very enjoyable and at only $13 a kilo on BeanGreen, a real bargain.
  • Nice one Kelsey. Sounds like you're back on the simplicity roasting wagon - which is tops  :thumb:
  • Yep. 1) warm roaster 2) warm beans 3) turn up temperature 4) don't stuff around with it 5) stop fiddling 6) pull beans out when they sound and look like cocopops that smoke

Some of my ristretto shots can go to around 45 secs for about 30g extracted fluid out of 18.5g grounds. Still perfectly OK, as long as extraction temp not too high. You might want to give it a shot - drop the temp 2-4 degrees and go for a long extraction. Worst case you waste a shot.

The way it should be. Data loggers take note  :D

Good plan - I'm away from home tonight with just the iPhone, but I'll put it up tomorrow.

I sometimes find that if they have to go that long they wind up a bit too cool abs slightly sour. My temps got as high as 95 last week to deal with a medium roast, but they're back down to 93 now which seems to suit this pretty well That said, I'm curious to try an even longer extraction.
  • Kelsey, what was your blend ratio? I did a small batch of blue Batak with the El Carmen (140:60g), was okay but nothing to write home about.  Interested to hear your ratio. Jonty
  • Sounds nice.  Not sure about my schedule these next few weeks.  Hopefully we can meet up soon somewhere in the middle? I've got both of those beans.  Was it a 50/50 blend?
  • The ratio was 400g/200g Did a 5 min warming cycle on the KKTO, followed by 5-10 mins with the beans in at that low temp. Then I just let it run through until rolling second crack started. I check it once at first crack but that was it. Jonty, I suspect that the Blue Batak and the El Carmen wouldn't be as nice a mix. Both Finca's I've tried yield the strong choc-rich flavours I'm after, as does the Blue Batak... but my reasoning has been that together they might just muddy the flavour. That's why I blended it with the Yirg, which for me has always been a touch too bright as a SO, but is great for creating some interesting 'highlights' blended with an 'earthier' bean. Or at least that's my justification.... I really have no idea. ;)

Just so that I don't stuff it up, that's Finca El Carmen 400g & Yirg 200gm?  Is that right?

    Done!
  • Kelsey, Got distracted on this roast, and pulled it on what I though was 2nd crack.  Got my head in the veggie patch instead!   Turns out I was luck and it was 2nd crack, the beans are just going slightly oily at 10 days and I've had a few coffees now, and they are very very nice. Might have to roast up another batch (while concentrating this time) for the new machine. :) Hope your feeling better, and coming to visit next week!!!
  • Glad you like it mate, so far most seem to prefer it as espresso rather than in milk.
  • Missed the second part of the above - starting to get on my feet, it was a rough one alright. It'd be good to catch up soon tho!
