Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.

Hi Brett Yeah .. couldn't believe it when for the first time I could actually tell that the first coffee was a ripper I put it down to the Detox .. they were probably all great only I couldn't tell? Nah .. my liver is in good shape .. tested regularly (an example only) .. you wouldn't want to be drinking coffee if your liver was crook. it's the cholesterol and the full-cream milk that are at odds in my case. I'm under pressure to revert to one of those skim milks. Yuk .. and they're a rip ($) at that.
Howdy Grumps Only had about 13 grams of the good stuff left .. so I had to top up with the older espresso beans for my first cup. 1. Rating - 8/10 .. not bad. 2. Here we go.. Espresso beans Surprisingly, using the same grind, tamp, triple Fellini etc .. the pour was spot on .. even with crema that had been missing the last few times I had used these beans. They may have come of age? Rating - 8.3/10 Hmm? .. not a total loss after all. 8.3/10 .. I can live with that .. heck, I might even be able to do better? Phew .. there is life after Barista .. well, at least until the new batch is ready in a couple more weeks. Ol' Moony is wising up .. if I am patient and wait .. I get to enjoy them throughout their peak time.. and get a better idea of how long it is .. or my 1 Kilo runs out, whichever comes first? A kg would normally last me around 3 weeks. Used to be 4 .. but hey, new machine and the coffees are better. I guess last time I was curious to know when the beans were changing, and needed to know how long to keep them for until I broke them out to join the party.

Don't worry Moony 'Ol Chap. Think I might find a Barista pack that is approaching a week old I can send you. And with our the 40 degree days next week, I'm sure the beans will accelerate. A new Colombian in the Barista blend and it's a cracker !

Fantastic .. my palate, and general well-being, including my state of mind - will be most grateful :thumb: It would certainly be handy to have a roasting date on the pack (give or take) to give an idea how long to store them?

Those Docs know they're up against it when they want to mess with my coffee I told him .. if there's a test to provide evidence that my high cholesterol is causing a problem .. I'll happily start taking the meds. Apparently there isn't. I then said why would I take a medication with the possibility of up to a dozen side effects .. as a precautionary measure - when there is no evidence that it is causing a problem? Is high cholesterol medication another Y2K scam? Maybe I could cut down on the Coles Vanilla ice-cream... it's a ripper. Nah .. maybe not?

Just realized I've still got some Guatemala beans. Maybe they've decided to come to the party? Also still have some green beans to roast up. I used to grind & use 'em the next day, only I now know that's not cool anymore :lamp:
Lol... I can't contribute to the cholesterol experience but there's doctors and there's doctors. Find a good one and they are gold!! Reminds me, I must take a bottle of Christmas cheer to the one who saved me last year!

Cholesterol is real and not a scam. There are two types though. good cholesterol and bad cholesterol You need to increase your good cholesterol by paying health professionals money and also reduce your bad cholesterol by paying health professionals more money. This may cause financial stress :'(, but you can then pay health professionals to advise you how to reduce stress levels. Or just live a healthy lifestyle and spend your money on quality coffee :coffee2: Eating lots of trans-fats is the best way to increase bad cholesterol BTW. Eating lots of vegetable and fish oil is the best way to increase good cholesterol. Try a peanut butter and fish diet (e.g fish satay). I find see food diets always work for me
Yeah .. don't mean to hang it on Doctors .. they have your best interest in mind - stay alive. Mine, on the other hand is killing me .. wants to get my cholesterol down, convert me to low fat milk .. and here's the kicker ---> give up the fags. See what I mean? In other coffee news.. Think I'll take the plunge and give the Guatemala another crack? Just read UNMs post .. think he might be onto something there.. I reckon the stress worrying about this stuff will kill you quicker than the cholesterol will? Maybe I worry too much about making a good coffee .. then again, the more I enjoy my coffee .. the happier I feel and therefore lower stress levels. Some stress is essential .. so I reckon it must be the stress that you have trying to make a good coffee. Better get back to making that Guatemala bean coffee.. so that I don't get too stressed out wondering whether it will turn out nice? Back shortly with the results. Oh yum .. Guatemala is back! Rating - Top scored with a 9.2/10 Full flavour and very smooth.. using the same grind setting as for Barista. 9 weeks + 3 days after roasting - wonder when this beauty hit its straps? 150g left. :'( <--- Nup The cup is still half full ;D The double Fellini move works fine when there is no slippage in the cylinder.
Nope .. air-tight plastic container in dark cupboard. Must be like some of us blokes .. we just seem to get better & better with age. I have read of coffee buffs claiming the beans are best after this sort of time.. it's working for me. About to go another .. just to make sure I haven't been hallucinating? Well .. I'm not hallucinating I was bagging mycuppa's Guatemala bean earlier in the peace .. but now giving credit where it is due Rating - 9.2/10 ..... and if there was a 9.3/10 .. it would romp it in for that - spectacular latte. mycuppa reckoned it was the best bean of the year and ordered 2 tonnes of it. I couldn't see it then .. but can now. Nice one mycuppa .. excellent call :thumb: ps. Better get onto the d00d and see if I can add a kilo to my order .. to pack away in the cupboard? Done.
Last of the Guatemala beans 1. 9/10 2. 9/10 3. 9.1/10 Had a Molar tooth taken out today. Will be much easier to taste and rate the coffee now .. rather than be distracted by pain when the hot coffee hit the tooth. New lot of Barista & Guatemala have just arrived. 1 Kg of each. Barista - roasted Jan 9 (17 days makes it Jan 26) when they should be ready? Guatemala - roasted Jan 11 .. gee, how long do I need to leave these? They were excellent at 9 weeks .. but when did they start peaking? I get the impression they are late bloomers .. a hard bean takes longer to come around? Sounds almost Human. Still got some Espresso beans .. so I will see what I can come up with using those?
Thanks for the PM mate, mine are on the way. No way those babies will last 9 weeks here. I reckon like the Two Guats I've had from BeanGreen peeking between weeks 2 and 3. However if they taste brilliant at 9 weeks who am I to argue!? You may have discovered a UHT Long-life coffee
Good to see someone else is trying them for a second opinion.. only it is only of value for comparison .. if you are a latte drinker? If you are, you could always put 100g away and pull them out in 2 months and see what you reckon? 100g so that you can play around to get it right. I'll have to go back and read my posts using them again.. to get the age after roasting, ratings & comments. I really need to put markings on the grinder so that I can repeat a grind that worked at the time with a particular bean. I suppose I should use some of the Guatemala in intervals, cause I need to know the earliest they come good .. and gauge their improvement right up to the 9 1/2 weeks, as for all I know, they may be past their peak. Golly, if they are past their peak .. I'm looking forward to trying them when they are at their best. Are you a shot .. latte drinker .. or both?

Ok .. I get it - skip the foreplay and let's cup .. Micky Rourke style.. 9 days are up on the Barista this Saturday, and I reckon my method has improved. I'll hold off on the Guatemala for a bit while I get the Barista sorted. Heck .. I might even throw a few beans in my Spong No4.. and see what happens?
Day 6 - Barista Well .. couldn't help myself and opened the Barista 3 days earlier than what mycuppa recommends. 1. Rating - 7.3/10 Crikey - bit of a come down that :'(.. after the heady days of 9-10 week old Guatemala scoring 9s. I'll try a cup on day 9 to taste what that's like? In the meantime .. back to working on the Espresso - to hopefully get back to scoring at least 8s? 2. Espresso bean Rating - 8/10 Yeah .. ok - I can handle this while I'm waiting for the good stuff.
Glad when the extreme heat ends .. I still drink coffee on say, 30 deg days .. but apart from the first for the day, these 40deg+ days are a bit of a stretch. Symptoms of caffeine deprivation will be kicking in soon? ::)
Harrumph!! It seems my reputation precedes me. Nice to know where I stand. I shall file that comment away under 'grudges'. 40+ today. Nice double ristretto of Mycuppa's Costa Rica naturals to start the day. Never too hot for :coffee2: My recipe for iced coffee is simpler than yours. Coffee+ice=iced coffee :thumb:
