After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.

Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.

  • Hi Guys, I have to tell you that I should of guessed what my ???friend!!! AM would do with the response he got from sending me to another friend and not answering my original question. I started the conversation re my not being happy with my Rancilio grinder.  You should have seen the look i got from that statement. They are the most popular ginder and the ones in most demand on eBay. Sell it then he says. So this started a dialogue as to where to next?  I run a Sunbeam 6910 and by all accounts I can get a reasonable mug of coffee out of this machine now that i know a few things about making coffee. Now please note I said MUG in other words i like a drink and when it's good I like it to last hence I always make a MUG of coffee.  Essentially I make a flat white and yes i do dust it off with some chocolate.  Lately though no sugar. Now we hear the latest talk about notes.  The last time i knew anything about a note it was either a 5 pound note or else someone was singing a high note in some musical. Who in his so called right mind associated notes with coffee?  The only note one gets from coffee is when the beans have been freshly gound and the aroma is lifting on the air and a gental breeze wafts the aroma across the room when people come and go opening doors.  Sorry i should have said SMELL! Now to the other side of notes.  I had a coffee machine in my office, another 6910.  Most mornings 2 to 3 would venture into my inner sanctuary and make a brew and then venture off to their daily grind.  The remaining smell, very pungent, hung heavily in the air. One morning after the said celebrations an executive secretary came in to see me and reeled back whilst still at the door saying, "What is that smell?"  Why its fresh coffee i replied would you like some?  "No way it smells like a mens urinal!"she exclaimed.  Now I leave you to wonder how she knew what a mens urinal smelt like! Really I said. And would you like a coffee? She left without saying another word. Now my reason for telling this true tale is that we have a number of coffee desperardos who are now say that we need to smell the roses as we drink the coffee and hey I'm an expert because i can sense all the other notes (roses).  Well me thinks how can this judge know how it is I like my coffee? How can he determine what is good for me?  Well the answer is he cannot.  I am responsible for my destiny and hence it is up to me to choose to say that's great coffee or that's a pile of mud.  No one else can tell me otherwise. I mean i have to drink it not smell it. ??? I wonder what one of these judges would say when going for a pee in a mens urinal?  Perhaps they could detect what the previous peeer had for lunch. :-* Now my question is if you were considering replacing ones 6910  what would you buy and why? It's a simple questions is it not and doesn't set off any Opera singers now does it? Smile its bean a good day! Oh and Anger TMB?????? Errr TBM if you please (tick)

  • Hi Richard, Do'n your head in??? Then go make a magic brew of the liquid tar they call coffee. That will set your head straight. And don't be a tippler, that's hoding it in one hand, get both hands around the MUG! Feel it , taste, smell it and make sure you drink it whilst it's hot. Pure gold as long as you don't smell any roses!

  • First post on the forum, am a newbie to the cafe industry, worked in a few kitchens, cafes, restaurants, resorts etc... but am now starting my own place - I'm a coffee lover and glorified 'coffee maker' - I'm the first to admit I'm no crack 'barista' which is partly the reason for me joining this forum to learn as much as I can from all the discussion - I'm 26 & I live on the mid North coast... Thanks in advance for all the tips, advise and info from everyone, Cheers ARC

  • I'm John, was Identity then coffeehorse on the CS board, which I left due to regular run-ins over dodgy sponsor behaviour and moderation of stuff that didn't need moderation. A few people there were getting banned because moderators couldn't unbundle their panties, which drove me onto Twitter to say what I mean (though I don't always mean what I say) Got into coffee as the biggest fix for my stunning trigeminal neuralgia/cluster headaches I could find at less than $65/dose. I've got a 'notes' background - tasting notes may come from wine, where my palate is a bit more average than I'd like, but I used to be the largest seller of incense in the UK - over 1000 different products, some with up to 15 'scent' ingredients in them. That's a lot of notes for your nose to pick up - especially on the japanese incense which is known for purity of scent and quality of aroma. Having 700 japanese incense products really helped train my nose, and selling aromatherapy oils also helped. I also ate some raspberries. I got roped into coffee judging by Luca and have am an AASCA Judge (like hazchem, but not as awesome) and will (sensory) judge barista comps whenever asked. I won't do tech because it sends me into caffeine withdrawal, and I spend too much time judging the notes to judge the grinds. KK you should remember me - try harder  :P I've got a Bezzera Domus Galatea, heavily modded, a Vibiemme Domobar Super & 2 BNZ MD-74 Conicals, a Hario hand grinder & a whole heap of beans - I'll review anything drinkable on twitter & am currently privately reviewing coffees to provide feedback for a number of australian roasters - hopefully they're getting as much out of it as I am. Really good to see familiar and unfamiliar faces - if anyone wants to talk notes, I'm all nose ears. John.

  • AM, if I wanted to read about notes, I'd play an instrument! I suck at describing taste. I've recently decided to give up trying, and trusting those who can.

    Start with caramel, cocoa, milk choc, dark choc, carob, bonfire toffee, dark caramel & fudge, and you've got the base of most coffee tasting. Normally you'll find one and only one of those in a coffee. Also, when all of those are missing, the taste you might be experiencing is......'coffee'. It's the woods/herbals/plants/soils which are hardest - after all, who's eaten the middle of an elm tree lately? If you're truly serious about not wanting to read about notes, don't follow me on twitter at any rate - it's all I ever tweet about.

    Me too... Too old, too much smoking and strange food... Thus can not detect Notes and I am tone deaf  ;D But I do  know what I like, it's just that naming / describing it is not always so easy...   Just ask my wife  ;)
    and as I keep telling my younger baristas, don't worry about describing the flavour to me, just concentrate on whether or not its delicious.

    You know those old outside dunnys from quite a few years back? Not sure if they are called long drops - anyways, the smell that they let off (my gran used to have one) is what I tasted recently in a coffee i had. Perhaps the closest description would be (i think) like a rotten egg smell.

    you shouldn't give up. You already know what things taste like, its just a matter of remembering them & building the neural pathways required to recall the information easily. and like I said earlier, focus on whether it is delicious or not. the rest will come ...
  • yeahh im new here too name's shaf .. call me shaf , shaffy , shafs .. doesnt bother me im a young professional (25yo) in the med field and hating it there discovered my passion for coffee about 4 years ago and it turned into some home roasting last year , i recently bought my self a has garanti 2kg roaster n godd do i love roasting on that....personally trying hard to get out of working for some one and instead work for my self thats my story ... im sure il have more stories to come
