Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.
Thank you for the welcome guys, Yes AM, My recollection might be a little hazy, but a wise man did tell me that: "If you haven't roasted your coffee to 3rd Crack, then you'll never know how good coffee can be" .. he did rather look quite elongated in features and rather hairy .. I'm sure he was a man .. well, come to think of it, maybe he was a Llama ... ? The Dali Llama perhaps? most probably not though. 3rd Crack: the elusive point of no return, spontaneous combustion, so much energy, you can't stop it. If it ain't on fire, it ain't worth drinking! So yes again AM .. 3rd Crack is my new venture into this wonderful world of coffee. After a very memorable 18 months at Supreme Roasters and 10 Golden Bean Medals later, I'm ready to retire from roasting as I now realise that aiming for 3rd Crack on my roast profiles may just be pushing coffee too far? mmmm .... pushing coffee beyond limits .. I'm convinced there's goodness beyond 3rd Crack. I have been known to be wrong before though. Where's my Green Tea?
I'll be pulling shots all day at No Name Lane tomorrow (Sunday the 4th March). My coffee features alongside their regular blend roasted by Black Sheep Coffee Roasters (Mark Gloftis - Brisbane). .. .. No Name Lane - a shop with two roasters. The original blend I designed for Peter Gloftis (owner, No Name Lane) was called EPIC and was awarded a bronze at the most recent Golden Bean. It featured the Tanzanian Blackburn Estate 'pick of the harvest' crop. The next blend featured another Tanzanian, this time from the Tarakea Rural Cooperative Society of Kilimanjaro and known in the shop as KING KILI . ... and of course coffee being seasonal .. and the tides of change coinciding with the creation of 3rd Crack, a little secret was learnt : SAN JOSE'S LITTLE SECRET to be precise. Now being showcased in store and extracted by yours truly every Sunday (until they get sick of me) .. so, if you're around Broadbeach, Gold Coast, please drop on in and let me make you a coffee or two or THREE. I can't promise that I'll actually have time for a chat, but will do my best to say hello !!!!

Oh no! Another one of AM's acquaintances that requires us to take a mental 'jump to the left, then a step to the right' to understand their posts. Welcome 3rd Crack. I'm sure I'll make the necessary mental adjustments in time. At least the learning experience will be quirky and interesting. Edit: Actually, I'm just wodnering if it maybe lack of caffeine on my part that causes the mental disconnect. Best check that as it is an easy test.

Nothing too interesting about the user name, just a name acronym that has stuck. Just your regular passionate prosumer coffee type although I have recently been thinking more and more about getting into the commercial coffee scene as a little side project from my usual line of work. After having traveled a bit I do feel quite lucky to live in Brisbane, it is nice to see more and more people from all sectors becoming educated and passionate about good coffee. Not something I have experienced in too many other cities.
Hi AM I'm lucky enough to work at D&D, we've met a few times there I get to play with lots of toys, FB80, old school GS2, Mazzer E's. Hi Everyone I'm a long time lurker, but thought it was time I said hello! I've been making coffee for about 6 years. Learnt my trade over in Wellington, loved it so much I ended up co-owning 2 cafes over there. Packed up just over a year ago to move back so the kids were closer to the grandparents. I'm lucky enough to work in a cafe at Hendra, and get to play with a whole range of toys. I'm really enjoying manual brew methods at home at the moment, until I find myself a nice lever machine to sit on the kitchen bench. Looking forward to getting to know you all better. Cheers, Matt.

NNL . has two regular blends ... the white: roasted by Black Sheep / / the black: roasted to 3rd Crack ...'s specifications confused yet? .. ;D This coming Sunday, the Oracle will be hosting Jan Powers Farmers Markets - It'll be super busy for us, but if you can get the chance to say hello, please do introduce yourself. I'm the guy behind the grinders. The farmers markets though are our busiest days ... so be prepared to fight the masses. OH .. there will be freshly roasted beans available for home. Funny story ..I was very honoured to serve you coffee on Sunday (pressure much, making a coffee for the Qld WBC reigning champ ;D ), then on the Tuesday morning, I was up at NeliCoffee .. they had a newspaper clipping of you championing filter coffees displayed on their brew bar ( :thumb: for filter ) ! and .. third times a charm ... you sign up here Tuesday night. so .. I guess ... Nice to have almost met you :rofl: looking forward to next time.

Will make sure we get to have a proper chat next time I've been trying to get to NeilCoffee but they have been closed every time I head there! Hopefully may get there this weekend.
